Using all the life out of this coconut.
We first put the coconut water in a green juice (I’ll post some of our veggie juice recipes soon) and then I continued to make use of it with this easy breakfast bowl. It’s beautifully bright and light, making it a phenomenally refreshing start to your day. It makes for the perfect summery breakfast and it’s super hydrating! The nutritious coconut bowl is filled with greek yogurt blended with chia seeds and topped with banana, mango, dragon fruit, and raw nuts. These are some of my favorite fruits currently, but feel free to use whatever fruit you have available. The mango I had was just ripe so it gave a pretty good balance of natural sweetness, banana is kind of a staple fruit in my breakfast since I find it quite filling, and the dragon fruit just has great texture so I love to include it in fruit bowls. I found that kiwi and pineapple is also a nice mix for this yogurt coconut bowl. The key factor in this breakfast bowl is obviously the coconut, so get in there and scrape the delicious meat out. I also, only used half of the coconut to later make another breakfast bowl. Coconuts really go along way!
Coconuts are big on electrolytes, potassium, minerals, and bioactive compounds aiding digestion, metabolism, hair and skin nourishment.
